A Weekday off and W.W. Bacon and Sun-Dried Tomato Alfredo Pasta

Since I have off next week, I have to work this Saturday, and that meant that I had today off.  That meant a three day weekend.  Woohoo.  So I got up this morning and instead of rushing to get dressed I took my time. I settled down on the couch with an iced coffee and last nights “The Amazing Race.” Am I the only person that thought this guy was an idiot?


I try to take at a B-Vitamin every day, and I usually take it with breakfast and have no problems.  But this morning I did not feel like eating breakfast so without thinking I took it and about 30 minutes later I felt like I was going to get sick.  Definitely did not feel like breakfast after that, but luckily I had a banana on the table so I ate that and it made me feel better.  So I finished watching “The Amazing Race,” then went off to do errands.  I went to Trader Joes (love their Fat Free Feta, egg beaters, and baby bella mushrooms), Whole Foods (for their Baby Spring Mix), The Salvation Army, Harris Teeter, and our day old bread outlet.

Then I came home to start cleaning my office/craft room.  This place is always a catch all for EVERYTHING.  My craft desk is usually full of mail, papers, and stuff I have purchased at work.  I spent the next 30 minutes shredding papers.  Then I fixed a salad with lettuce, grape tomatoes, onions (lots), feta, and Strawberry Vinaigrette for lunch.  Then off to more shredding.  My office/craft room looks so much better now.    Here is a really blurry picture, the overhead light in the room is broken, so it was really hard to take a picture.  I will try to take some more on a really sunny day.


I decided to settle down on the couch and watch some Netflix.  I have had “A Home of Our Own,” in my queue forever so I decided to watch that again.

That and a couple of “Roseanne” episodes later it was time to start dinner before my sister got home from work.  Tonight’s dinner was a favorite from the “Weight Watchers 5 ingredient, 15 minute Cookbook.”  I changed some things but here it goes.

Bacon and Sun-Dried Tomato Alfredo Pasta

8 ounces of uncooked multigrain penne pasta (I used a whole box)

1 (10 ounce) package of light Alfredo Sauce (I used Classico)

1/2 cup of sun-dried tomatoes, packed w/out oil (I used a pack of Trader Joes Sun-Dried Tomatoes)

4 slices of precooked bacon (I used 28 grams of real bacon bits)

1/4 cup of fresh basil (couldn’t find any that was not $2.99 a pack, so I used some dried basil I had in the cabinet)

1/4 tsp. of black pepper

Cook the pasta according to directions.  In the meantime add the Alfredo sauce and the sun-dried tomatoes to a large sauce pan and cook until the tomatoes are plump.  Then remove from the heat.  At this time I added LOTS of black pepper and some dried basil (less then 1/4 cup).  Stir.  Drain the pasta and add to the saucepan.  Combine the pasta and the sauce.  Stir in the bacon. 

I served this with some hoagie buns that I turned into garlic bread. This is made 4 servings and with the garlic bread it was 10 points.  That is a lot for dinner, and this is the reason I usually avoid pasta.  But my sister would rather have pasta or spaghetti then anything else.


Well tomorrow its back to work, and tonight is ‘Biggest Loser” night.
