Menu Planning

I just spent the last 2 hours or so going through some cookbooks, and planning out our menus for the next 3 weeks.  Honestly I am one of those people who really likes getting time-consuming projects like this done in big chunks.  So tonight was the night.

Sunday, January 23:  Beef Stir Fry with Broccoli & cauliflower (Rocco Dispirito, “Now Eat This“)

Monday, January 24:  Feta Stuffed Burgers (BH&G, “Fresh and Easy”)

Tuesday, January 25:  Baked Chicken Flatout Rollups (my concoction)

Wednesday, January 26:  Portobello Mushroom Burgers (may use Roni’s recipe again), and something for the brother

Thursday, January 27:  Pork Roast Stir Fry with peppers and onions

Friday, January 28:  Leftover Feta Burgers

Saturday, January 29:  Spaghetti Squash Spaghetti with vegetable garden sauce (& the brother will have plain spaghetti)

Sunday, January 30:  Pesto Chicken & Squash (BH&G, “Fresh and Easy”)

Monday, January 31:  Taco Salad

Tuesday, February 1:  vegetarian Sloppy Joes (probably the kind from Fantastic Foods)

Wednesday, February 2:  Steak, Baked Fries, and Vegetable Primavera (BH&G, “Fresh and Easy”)

Thursday, February 3:  Stuffed Chicken with assorted vegetables and baked potatoes

Friday, February 4:  Leftover Pork Stir Fry (from the freezer 🙂 )

Saturday, February 5:  Homemade Hoagies (I have an event to go to)

Sunday, February 6:  Spicy Black Bean Burgers (BH&G, “Fresh and Easy”)

Monday, February 7:  Fajitas in a Foil Pack (Hungry Girl 1-2-3)

Tuesday, February 8:  Hamburger & Sweet Potato Fries

Wednesday, February 9:  Taco Salad

Thursday, February 10:  Chicken & Flatouts

Friday, February 11:  Steak, Baked Fries, Salad

AND that is where I gave up. lol.  I plan on laying across the bed tonight and reading The Happy Herbivore, By Lindsay S. Nixon.  I just got it today, and thumb through it…..omg…some GREAT things in there.

Now I am worn out, 2 posts in one day.  lol.  Plan on getting a snack, and settling down to watch some more Alias.
